One of my biggest passions, besides sex of course, is cooking. My two shining performances come from me on my knees and me in the kitchen…Some would say this is where I belong. Ha. Well from time to time when I make something my roommate and I dub especially nom-tastic I’ll throw up some pictures and recipes for you to try.
Just tonight I made Chicken and Prosciutto Pasta with Spinach in a White Sauce. Tossed with angel hair pasta and voila!
4 Chicken Breasts
½ lb Prosciutto, diced
3 cups fresh spinach
1 onion, diced
4 cloves garlic, chopped
1 can diced tomatoes and green chilies
¼ cup chicken broth
1 can alfredo sauce
1 pkg angel hair pasta
1 tbsp olive oil
Crushed Red Pepper
Prepare angel hair as directed on the package.
In a skillet add olive oil and chicken. Add onions, garlic, garlic powder, crushed red pepper, cumin, and Italian seasoning. Brown chicken on both sides, then add chicken broth and cover. Simmer until chicken is no longer pink. Dice after removing.
Remove chicken from pan. On high add prosciutto and sauté 2-3 mintues. Add spinach and sauté for an additional minute.
Return chicken to pan, and add alfredo sauce and diced tomatoes with green chilis. Heat thoroughly
Drain pasta and toss with prepared pasta sauce. Serve with fresh ground pepper and parmesan cheese!
